Now that we have a permanent kitchen that's all our own in a converted barn (yep!) - we've really been making an effort to look at the little things we do every day in our business which have a big impact on the community and environment around us.
It has been so rewarding to get to know a whole lot of new local suppliers. Its impossible to imagine going back to buying from a middle man.
The quality and service provided by these local Irish businesses is just so outstanding that we had to make a little blog post about them. Also, we think it might add an extra dimension of fun and 'feel - good' to your catered event to know that you are supporting so many brilliant Irish producers when you choose Wild Thyme.
Lamb:
All purchased directly from Emma (the farmette!) at Ballyshonog Farm in Co. Wicklow.
Chicken:
Delighted we now have free range 100% Irish chicken delivered to our door whenever we need it. And a chat with the chicken man about his greyhounds!
Beef:
The tenderest, most delicious, 21 day dry aged Wicklow beef from John Synnott in Newtownmountkennedy.
Pork & Hog Roasts:
If you're going to roast a whole pig on a spit it had better be a good one! So it's Ballyshonog free range pork all the way.
Oil:
This is really our favorite discovery in years. Donegal rapeseed oil. Not a drop of olive oil in our kitchen since February and we don't miss it one bit!
Mozzarella:
Ok so it's a close race for first between the rapeseed oil and this Toon's Bridge Irish mozzarella, made in Co. Cork.
Herbs:
We spent two hours touring O Hanlon herbs in Glenealy a few weeks ago - man are they proud of what they're producing down there. And rightly so! Purple basil or pineapple mint anyone?
Cleaning:
We get all our cleaning products from Lilly's Eco Clean - They're effective, non toxic, Irish made cleaning products. Tick all the boxes!

BBQ Dropoff
As with most of our new ideas this one came about when a client described to us exactly what she had in mind and wondered if we could create something just for her.
Everything you need for a great summer barbecue - delivered to your door!
We do all the slogging so you have the whole day free to relax, go to the salon, take a bubble bath .... or more likely - scrub the children, wash the floor, brush the cat and pile all the clutter into any available cupboards and drawers!

Spring 2012
Just time to post a few pics of what we've been up to lately.
Back in Wicklow we catered a 50th wedding anniversary lunch for 40 guests- on the menu was - classic beef casserole (in the le crueset), pilaf jasmine rice (behind the le creuset!), poached sides of salmon with wild garlic sauce, roasted butternut squash salad with aubergene sauce, petit pois and baby spinach salad with feta. For dessert we made - chocolate raspberry meringue and chocolate brownies (choc fest!) - no time for dessert pics sadly - blink and you miss them!

For a lovely little girl's christening in Dublin we brought - red rice and quinoa salad, watermelon and feta salad, wild thyme red cabbage and mint coleslaw, poached salmon with wild garlic sauce, harissa chicken with rocket and pink grapefruit, brown seed soda bread and pear and ginger meringue with chocolate sauce. (We didn't bring that amazing pink and white christening cake there in the background). Plenty for 30 hungry guests and leftovers for lunch tomorrow.

We are delighted to announce our new 'Dropoff Catering Menu' for 2012.
Ideal for Christenings, First Communions and Confirmations - Or just a great excuse to have a party!
2 Main Courses, 3 Salads, Bread and Dessert - for €15 per person.
We will personally deliver all these goodies to your home on the day of your party. We will set up a beautiful buffet using our serving platters and leave you plenty of serving utensils so you are ready to go.
All the dishes on this menu are designed to be served at room temperature so you are not stressed with reheating or worrying if things get cold or overcooked when there are inevitable delays. All your attention can be fully focused on enjoying your own party!
